Organizing service for a private three-course dinner for 190 members, while simultaneously providing dinner service to 150 others, and preparing for a brunch the following day with an expected crowd of 150 hungry patrons is just another day on the job for The Landings Club’s Executive Chef Sam Brod.

Chef Sam Brod is responsible for overseeing the day-to-day operations and staff at each of our four clubhouses at The Landings.

About Chef

Chef Brod joined the Landings after a long exploration of the culinary arts that took him everywhere from New York City to California and even as far as Italy. Most recently Chef Brod served as Executive Chef at Grandfather Country Club, in Boone, North Carolina.

Growing up on a Farm in Pennsylvania, Chef Brod developed a passion for simple dishes derived from quality ingredients. “I really enjoy the traveling and working with different local ingredients, and the farming element of it is always something that I’ve had a passion for,” revealed Brod.

Cooking with Passion

You can see Chef’s passion on full display in the Menus that he creates for each of our clubhouses, which are all created from locally sourced ingredients.

It is this dedication to local, organic ingredients that Chef Brod has poured into menus which include Georgia grown, in-season ingredients like famous Georgia peaches, heirloom tomatoes, and the best seafood around, to create a taste as unique as the island it calls home.

Keep it Local

When asked what makes local ingredients so vital, Chef explained that local ingredients that are grown in season taste the way they were intended. For example, Vidalia onions taste the best when they are grown in Vidalia, Georgia.

“The French call it Terrior,” explains Chef. “It’s a reference to their wine…you can have a great varietal from anywhere, but if it doesn’t have the local soil, atmosphere, and mineralogy count, it won’t even taste the same.”

What makes the cuisine at The Landings so special is a combination of all things local, “It’s the local shellfish, the local produce, and the local people, confesses Chef
Not big on seafood? Not to worry, all four of the clubs on our island exude their own identity, each with distinct menus that are designed to offer a unique dining experience.
